Equipment
medium saucepan
spoon or whisk
popsicle mold
freezer
Ingredients
1 ¾
cups
cream (milk works perfectly fine)
¼
cup
sugar
4
large egg yolks
1
teaspoon
vanilla extract
Instructions
Whisk cream, sugar, and egg yolks together in a saucepan, over low heat.
Whisk slowly and continually until mixture just begins to bubble - not quite simmering.
Immediately remove from heat, and let cool until pudding is warm and slightly thick, but not hot - about 15 minutes.
Add the vanilla, and gently stir well, until thoroughly mixed.
Pour pudding into popsicle molds. Tap gently to remove any air bubbles. Insert handles or popsicle sticks, and freeze until solid - about 5 hours.
Notes
If you really love vanilla, try making this with two teaspoons instead of one!
