Perfect Homemade Fudge Pops

Equipment

  • medium saucepan
  • spoon or whisk
  • popsicle mold
  • freezer

Ingredients

  • ¼ cup cocoa powder
  • ¼ cup sugar
  • 4 large egg yolks
  • 1.5 cups cream (milk works perfectly fine)

Instructions

  • Whisk all ingredients together in a saucepan, over low heat.
  • Whisk continually until mixture just begins to bubble - not quite simmering.
  • Remove from heat, and let cool until pudding is warm and thick, but not hot - about 15 minutes.
  • Whisk pudding again for just a moment, then pour into popsicle molds. Tap gently to remove any air bubbles. Insert handles or popsicle sticks, and freeze until solid - about 5 hours.
