- ¼ cup cocoa powder
- ¼ cup sugar
- 4 large egg yolks
- 1.5 cups cream (milk works perfectly fine)
Whisk all ingredients together in a saucepan, over low heat.
Whisk continually until mixture just begins to bubble - not quite simmering.
Remove from heat, and let cool until pudding is warm and thick, but not hot - about 15 minutes.
Whisk pudding again for just a moment, then pour into popsicle molds. Tap gently to remove any air bubbles. Insert handles or popsicle sticks, and freeze until solid - about 5 hours.
