Gluten Free {Fair Trade} Peanut Butter Blossoms

These decadent peanut butter blossoms are every bit as wonderful as the peanut butter kiss cookies we grew up making for Christmas, but they're gluten-free and made without using chocolate that enslaves children.

Cookie Ingredients

  • 1 cup peanut butter
  • 3/4 cup organic granulated sugar (or 2/3 c. honey)
  • 1 large egg
  • 3/4 tsp baking powder
  • 1.5 ounces fairly-traded dark chocolate

For the Chocolate Centers

    • Preheat oven to 350°
    • Chop chocolate into small pieces, about 1/2" square.
    • Mix all cookie ingredients thoroughly.
    • Roll tablespoonfuls of dough into balls and place on ungreased (or parchment-lined) cookie sheet. Do not flatten.
    • Bake for 7 minutes, or until just barely turning golden brown.
    • Remove from oven, then gently press a piece of chocolate into the center of each cookie - just enough to flatten slightly and make those lovely cracks around the sides.
    • Let cool, and enjoy! Store any cookies not eaten right away in an airtight container, to preserve softness.
