Gluten Free {Fair Trade} Peanut Butter Blossoms
These decadent peanut butter blossoms are every bit as wonderful as the peanut butter kiss cookies we grew up making for Christmas, but they're gluten-free and made without using chocolate that enslaves children.

Cookie Ingredients
- 1 cup peanut butter
- ¾ cup organic granulated sugar (or ⅔ c. honey)
- 1 large egg
- ¾ teaspoon baking powder
- 1.5 ounces fairly-traded dark chocolate
For the Chocolate Centers
Preheat oven to 350°
Chop chocolate into small pieces, about ½" square.
Mix all cookie ingredients thoroughly.
Roll tablespoonfuls of dough into balls and place on ungreased (or parchment-lined) cookie sheet. Do not flatten.
Bake for 7 minutes, or until just barely turning golden brown.
Remove from oven, then gently press a piece of chocolate into the center of each cookie - just enough to flatten slightly and make those lovely cracks around the sides.
Let cool, and enjoy! Store any cookies not eaten right away in an airtight container, to preserve softness.
