I have a feeling that months from now, when I'm looking back on this summer, I may end up thinking of it as The Great Summer of So Many Popsicles.
We started popsicle season really early this year, and the kids and I have had a ridiculous amount of fun coming up with new recipes to try out, during our daily popsicle break/tasting sessions. Oh, summer, how we love thee!
With all this experimenting, most recipes go through a fair bit of tweaking before they finally get written down in my recipe book. A couple weeks ago though, I felt pretty confident about our chocolate fudgesicle recipe on just the second try, so I handed one to my husband to get his take on it.
He took a bite. And another. And then he shook his head. "Are you sure you want to share this recipe?" he asked. "I mean - we could start a fudgesicle business around this recipe! And also - can I have one of these every day?"
Ok, then. We're going to take that as a thumbs-up. Now, while I appreciated his enthusiastic approval, I do not see myself starting a popsicle company. Not now. Not in any lifetime. I'm only too happy to share this with anyone looking for a good, fudgey, foolproof chocolate fudge pop recipe, that uses real ingredients and isn't based around a box of pudding mix.

Perfect Homemade Fudge Pops
Equipment
- medium saucepan
- spoon or whisk
- popsicle mold
- freezer
Ingredients
- ¼ cup cocoa powder
- ¼ cup sugar
- 4 large egg yolks
- 1.5 cups cream (milk works perfectly fine)
Instructions
- Whisk all ingredients together in a saucepan, over low heat.
- Whisk continually until mixture just begins to bubble - not quite simmering.
- Remove from heat, and let cool until pudding is warm and thick, but not hot - about 15 minutes.
- Whisk pudding again for just a moment, then pour into popsicle molds. Tap gently to remove any air bubbles. Insert handles or popsicle sticks, and freeze until solid - about 5 hours.
Nutrition
Compared to dumping a box of powder in a bowl and whipping it up with some milk, this might seem like taking the long way to "homemade" fudgesicle heaven. But really - it's only four ingredients, and if you make this chocolate pudding pops recipe as often as I do, you could make these in your sleep. It's as quick and easy as scrambling up an egg or making a bowl of oatmeal. Easy peasy.
But don't make them because they're easy. Make them because they're wonderful. And addictive. I really hope you enjoy them as much as we do!!
